Ingredient sources
Every ingredient has a hometown
Oolong from the Bao Loc tea hills, Tan Cuong green tea, Ho Tay lotus rice, fruit picked in season and silken tofu made fresh each morning. Nhà An buys by season, close to the source, and works directly with family farms.

Why we ask about every source
Great from the root, then comes the recipe
Before we think about recipes, Nhà An starts with a few simple questions: where was this tea leaf picked, which month is this fruit ripe, and what time was this tofu made?
That is why we work directly with family farms and follow the rhythm of each region's seasons, so that every ingredient reaches the counter still tasting of the place where it grew.

- 1 bud, 2 leaves
- The Bao Loc oolong shoots we pick
- 4 hours
- Until a fresh batch of tea base is brewed
- 05:00
- The oven starts baking every day
- 100%
- Of the kitchen's dishes are vegetarian
How we choose
Six principles from farm to kitchen
Seasonal
Fruit and vegetables are used at the height of their season, when they are freshest and most flavorful. When a season ends, the menu moves on to whatever is now ripe.
Close to the source
We go straight to each ingredient's renowned growing region, with few middlemen, so we know exactly where it comes from and how it is made.
Direct with farmers
We talk directly with growers about plant varieties and care, and work together to keep quality steady from one harvest to the next.
Sensory check on every lot
Every delivery is checked by color, smelled and tasted before it goes to the kitchen or the counter.
Small batches, made fresh
Tea is roasted in small batches, toppings are made batch by batch and tofu is made every morning, so ingredients are always fresh.
Fully vegetarian
Every dish is vegetarian, with broths simmered from vegetables and no MSG.
Ingredient map
Six hometowns in your cup of tea
Traveling from north to south: three regions for tea and fragrance, three for seasonal fruit.

Tan Cuong green tea
Small buds, curled leaves, a golden-green liquor that starts gently astringent and finishes sweet. Nhà An scents Tan Cuong green tea with jasmine blossoms for our jasmine tea.

Luc Ngan lychee
Red skin, thick flesh, a small seed and a fragrant sweetness. The early-summer lychee season is short, so it is worth the wait every year.
Xem thêm
Bach Diep lotus rice
Lotus rice (gạo sen) is the tiny ivory grains at the tips of the lotus stamens, where the fragrance is strongest. Nhà An uses Bach Diep lotus rice from Ho Tay to scent our lotus tea.
Xem thêm
Da Lat strawberries
Strawberries from the cool highlands: plump and red, sweet-tart and richly fragrant. A familiar face in our fruit teas.
Xem thêm
Bao Loc oolong
One bud and two leaves from the cool highlands, roasted over longan wood fire in small batches for a warm roasted aroma and a sweet finish.
Xem thêm
Hòa Lộc cát mango
A specialty of the orchards along the Tien River: smooth golden flesh, hardly any fiber, sweet and fragrant. In peak season, mango makes its way into our fruit teas.

From the farm to the Nhà An counter
Every ingredient travels its own road, but all of them pass through these stops.
- Before the season
Choosing the region, setting the date
Nhà An and the farmers agree on the harvest time ahead of the season, so we can welcome ingredients at their very best.
- Harvest day
Picked at just the right moment
Tea is picked as one bud and two leaves, lotus is picked at dawn while the flower is half-open, and fruit is picked just as it ripens.
- After harvest
Roasting and scenting
Oolong is roasted over longan wood in small batches, green tea is scented with jasmine blossoms and lotus tea is scented with lotus rice.
- On arrival
Sensory check
Every lot is checked by color, smelled and tasted. Only what passes goes to the kitchen and the counter.
- Every day
Made fresh in the shop
Tea base is brewed fresh every 4 hours, tofu is made every morning and the ovens fire up at 5 a.m.
- At the counter
Into your hands
Your drink is made with the sugar level, ice and milk you choose. Your feedback helps Nhà An choose better ingredients every season.
Vegetarian kitchen and bakery
Made in the kitchen, made every day
Three ingredients behind the vegetarian meals and fresh bakes at Nhà An.

Silken tofu made every morning
Soybeans are soaked, ground, cooked and strained into soy milk, then set into soft, silky tofu for our breakfast and lunch dishes.

Seasonal organic greens
Organic vegetables go into our breakfast, lunch and late-night vegetarian dishes. Each season brings its own produce, so the greens in your bowl change with the seasons.
Xem thêm
Flour and cultured butter
Cultured butter is made from cream fermented with lactic bacteria, giving it a rich aroma and a gentle tang. Together with flour, it builds the crisp, fragrant layers of our croissants.

Tips for choosing fresh ingredients
A few small tricks you can use on your next trip to the market.
Dried tea
- Even leaves, dry and crisp, with few crumbs
- A clear fragrance, with no damp, moldy or off smells
- Sealed packaging that states the place of origin and expiry date
Fruit
- Favor in-season fruit, when it is freshest and most flavorful
- Strawberries evenly red with green stems, not bruised or mushy
- Lychees with fresh skin that is not darkened; mangoes that smell sweet at the stem with taut skin
Vegetables and tofu
- Leafy greens that are fresh with crisp stems, not wilted or bruised
- Silken tofu that is smooth and white, smells of soybeans and has no sour odor
- Keep it cold and eat it the same day
Quick questions about ingredients
Why does Nhà An choose Bao Loc oolong?
Bao Loc has a cool highland climate and is one of Vietnam's best-known oolong regions. Nhà An picks one bud and two leaves there, then roasts them over longan wood fire in small batches.
What happens to the fruit teas when a fruit goes out of season?
Fruit teas at Nhà An follow the seasons: when one fruit's season ends, the drink switches to whichever fruit is now ripe. Check the Seasonal Calendar to see what is available each month.
Is the food suitable for vegans?
Everything on the menu at Nhà An is vegetarian. Some pastries contain eggs, milk or butter; vegan items (no eggs, no dairy) are labeled separately at the counter.
What should I do if I have a food allergy?
Please tell our staff when you order if you are allergic to milk, eggs, gluten, soy, peanuts, sesame or tree nuts, so we can recommend suitable dishes.

Nhà An plans to offer bagged tea at the counter along with tea gift boxes; details will be announced at opening.
